Out of this World Chocolate Cupcakes
Moving office can be stressful so some comfort food was in order.
Here’s the recipe if you want to give them a whirl yourself…
3/4 cup butter (room temperature)
1.5 cups caster sugar
2 cups flour
pinch of salt
1 tsp baking soda
3/4 cup cocoa powder
2 tbs instant coffee
1 1/2 cup milk
2 tsp vanilla extract
Cream cheese (room temperature)
1/3 cup butter (room temperature)
1/2 icing sugar (this is approximate I just throw in icing sugar until I get the right level of sweetness)
100g melted and cooled dark chocolate (70%)
Preheat the oven to 190 degrees celsius.
Beat butter till pale, ddd sugar and beat till creamy. Then beat in the eggs one at a time.
Sieve all the dry ingredients. Mix the vanilla and milk together in a jug.
Gently mix in 1/3 of the dry ingredients then 1/3 wet ingredients, alternate until you end with the dry.
Line a tray with liners. Fill 2/3 full.
Reduce oven heat to 175 degrees celsius (you’ll loose your initial 190 heat when you open the door so now the temperature will be just right).
Bake 20-25 mins.
Impatiently wait until they are cool before icing.
Whisk the cream cheese and butter until smooth then whisk in the icing sugar, then add in the dark chocolate.
Ice your cakes and enjoy.
